Welcome Jr. Chefs! This ‘advanced’ course is for any chef who has spent some time in the kitchen helping out. Requirements include experience with knives and chopping, and cooking over a hot stove. All chefs who qualify for the above are welcome!
Iran has a variety of 2,500 types of traditional food, one of the richest in the world. The cuisine of Iran has made extensive contact throughout its history with the cuisines of its neighbouring regions, including Caucasian cuisine, Central Asian cuisine, Greek cuisine, Levantine cuisine, Mesopotamian cuisine, Russian cuisine and Turkish cuisine. Iranians love fresh herbs, saffron and MANY other spices, lavash breads, and lots of onion!
Our menu for this class features very traditional and old recipes, including a simple mint and vinegar syrup called Sekajebin, which includes just a few ingrediants – perfect for those of us with a field of fresh mint! Chefs will receive a jar to take home to enjoy throughout the summer as a beverage, or to dip into fresh crisp lettuce! Our desert featured is a sweet, saffron, cardamon, and rosewater based rice pudding – called Sholeh Zard. Normally served for special occasions, but too good to wait for something special! Our main, loobia polo, is a weekly event at Chef Nina’s!
Menu:
Sabzi Khordan: A plate fixed on any Iranian table consisting of fresh herbs, raw onion, lavash bread, and feta cheese
Loobia Polo (photo above): Choice of vegetarian or ground chicken, basmati rice, organic green beans, tomato paste, onion. Olive Oil will be utilized for this recipe
Kuku Sabzi: egg and herb pancake : Fresh local eggs, dill, cilantro, parsley, spinach, garlic, chives, and scallion. Grapeseed oil with be utilized for this recipe.
Sholeh Zard: Jasmine rice, Cardamom pods, Iranian Saffron Threads, Rosewater, Sugar
Sekajebin: Vinegar, mint, sugar (see photo)
This class features an urban garden tour, before chefs begin work in the kitchen. Fresh eggs collected, herbs harvested from the garden, and discussion surrounding composting and our local food systems.
Parents are welcome to join us to eat at 1:45! Pick up is between 2:00-2:30.
